Roman Christianity moved the day to commemorate the birth of Jesus to the winter solstice. It thus replaced a holiday of older religions that celebrated the end of the dark times and the coming of more light. The deeper meaning stayed. Hope for new beginnings, needed as much today than ever. Hope for walls of darkness to come down.

Like every year I am visiting my larger family and enjoy to cook for the whole crowd. The challenge is to meet everyone's taste. The kids seem to change theirs each year. I try to come up with stories to make them like those odd side dishes. It works with the younger ones. The older folks, just like myself, are a bit less flexible. It does not have to be this way. We can and should stay open for new insights and challenges.

I wish you all a contemplative, hope- and peaceful Christmas.

Merry Christmas Mr B, and to your family too. Your blog brings so much respite to many of us in this 'desert'. It is an oasis in 'sand-swept lands'. Dunes of sand may seem romantic on a picture postcard, but anyone whom has known it, prefers the oasis and the warmth of other simple, but astute human beings. Thank you for hosting us friend. As one good cook to another, here is a recipe that is bound to wow your extended family. Happy cooking and many extended trails. Merry Christmas.

A Simple Caribbean Casserole
6 green onions
Pork shoulder butt (about 2 pounds, cut into chunks)
2 tablespoons minced, unpeeled fresh ginger
3 tablespoons soy sauce
3 tablespoons Worcestershire sauce
3 tablespoons fish sauce
1 teaspoon dried thyme
1 teaspoon ground allspice
1 teaspoon cayenne pepper
1 teaspoon dried thyme
3 sweet potatoes, unpeeled, cut into chunk-thick slices
2 large red peppers, cut into bite-size pieces
2 tablespoons vegetable oil
1 can pineapple chunks in their own juice, or a half fresh pineapple if you happen to be in a place that has pineapples

1) Mince 2 green onions. In large bowl, toss minced green onions with pork, ginger, soy sauce, Worcestershire sauce, fish sauce, thyme, allspice and cayenne pepper. Cover pork and marinate 3 hours. Can prepare ahead of time and marinate overnight.

2) Preheat oven to 425*F. Cut remaining green onions into 2-inch longitudinal pieces. In a casserole pan, toss sweet potatoes (most of the health is in its unpeeled skin), red pepper and green onion pieces, and 1 tablespoon of oil. Bake, uncovered for 20 minutes.

3) While vegetables are cooking, in skillet, heat remaining 1 tablespoon oil over medium-high heat; add half of pork, reserving any marinade, and cook briefly at high heat, until browned. Transfer pork to bowl; repeat with remaining pork. The point in this step is to slightly brown the meat so it closes up on the outside as it still retains its uncooked juiciness on the inside. It is to brown its outsides briefly so to speak,

4) Add pineapple chunks with their juices, the browned pork, and reserved marinade to vegetables in the casserole pan. Bake, uncovered, stirring occasionally, 30 minutes longer, or until pork and vegetables are tender. I like mine well done so I bake it for an hour.

Now gather your guests around, open a nice bottle of vino and enjoy. Bon Appetite Mr B!

What is chistmas, men made fake news or commercial get rich schemes for more than 2000 years?

During the SubPrime housing bubbles even experience homeless for more than eight months.

#80. I think you overstate the importance of this. The UN General Assembly has a history of voting against the US and Israel in favor of Palestinians This was so clearly against international law I am almost surprised there were so many opposed/abstaining.

More important was the vote in the UNSC supporting more sanctions on North Korea. Russia and China voted in favor. It reminds me how the Soviet Union and Stalin allowed the UN war against North Korea by abstaining. This action if proven effective could lead to disaster for the region

If the US did not suffer the occasional setback in the international arena then people might see the truth , which is that they are under the rule of the US Trumpian Empire( in fact an Anglo-American- Israeli trinity) . With bases in almost every country and control of the worlds reserve currency and thus oil, satellite coverage everywhere, control of the internet, supremacy in the air and at sea, and a food supply matched by none and needed by many. Even those in China and Russia are subjects in part thanks to their oligarchs having sold them out. Independence is an illusion.

If the US did not suffer the occasional setback in the international arena then people might see the truth , which is that they are under the rule of the US Trumpian Empire( in fact an Anglo-American- Israeli trinity) .

I am observing that reality becoming old history. China, Russia, Venezuela, and the BRICS countries are not trading gas and oil for dollars.

Escobar also covers the demise of SWIFT as the only currancy exchange trade system.

Thanks b you do such a great high quality job. I am concerned though that so many people in the west just don't care what happens so long as they can keep distracting themselves with technology. Yes it's a perpetual struggle in this world as good does not naturally predominate the order of things as it should.

You need to take the meds your mental health care provider prescribed as instructed. When you skip a dose, things like that happen. If you are not already medicated, you definitely need to seek help.
